Villagers are frustrating to manage. They often get stuck, which will unlink them from their job site. They will then aim for some unreachable job site that is far away, ignoring the job site that is close to them. They will keep doing this, again and again, until they eventually gave up and stopped searching entirely.
For example, I have a fisherman that I traded with, locking his job, which is what I want. I provided a barrel right next to him, which hasn't been taken by other villagers. But I have a lot of barrels in my village, many are unreachable, and they won't renew their trades as they keep aiming for barrels that are far away. Eventually (at least in Bedrock edition) they gave up searching for job sites and just wander around.
In Bedrock edition villagers can also get stuck on random places, like fences that aren't in the way, or jumping around on carpets. This adds the risk of them unlinking from their job site.
The Pointer Stick can really help with this. You use it on a villager, then a job site. That villager will then link with that job site, simple as that. It can be made with copper or other 1.17 blocks to give them more use. Of course, it can be used to link a villager to a bed too. If you link a villager to a job site/bed that has been taken, that villager will forcefully take that job site/bed, unlinking the previous owner.
Mojang, please add something like this, as building a village has become quite frustrating. They keep ignoring nearby job sites/beds!
