In order to turn a resident into a botanist, you need a botanical table.

botanical table = a table where you can turn flowers into a bouquet.

bouquet = this is 20-30 flowers in one item, creation on a botanical table

botanist = a villager with whom you can exchange a bouquet for emeralds,

the higher the rarity of the flower from which you make a bouquet, the more emeralds

eg:
wieser rose bouquet -> 7 emeralds
