I think animals should spawn with randomized sizes both overall and to its body-parts.
A cow for instance could have longer legs, a larger head or a really short body.
Besides variation, where this gets really interesting is with breeding. If you pick out 2 cows, both with large heads and breed them, there is a large chance the baby will inherit this trait.
Over time you would breed animals with wildly different proportions.
This could be extended to any trait like coloration.
You could breed really good horses, personalized dogs, really fat pigs that might give you more meat etc.
This would make breeding more involved and fun to experiment with, and perhaps even educational on how genes works and are inherited, and how guided evolution has given us companions in the form of our dogs and cats.
