The modern creative inventory with categories was introduced over 8 years ago. Since then, so many new things have been added and the menu became more cluttered. Now, when I use the menu, I almost exclusively use the Search tab, because finding blocks takes way too long.
The best thing to do to reduce clutter is to put large groups of similar items into categories. Instead of having a dozen different slabs in the inventory, there would be a single slab that would expand to allow the player to choose which kind they wanted to use. Stairs and doors would also be compressed into categories. Right now, copper blocks take up almost an entire screen because of the different varieties (stairs, slabs, and blocks each with different corrosion levels) These could all be pressed into a couple of slots that expand out when used.
Another thing is to sort blocks into more intuitive tabs. For example, slime blocks are in the Decorations tab, even though people exclusively use them for redstone. It could be moved, or it could be left in both the decorations and redstone tabs to make it easier to find for people using it for either purpose.
I saw another suggestion about making it possible to use crafting tables and anvils straight from the Creative inventory which I think would be a great addition alongside these changes
