More 1.17 Mobs; Bison and Reindeer

Recently we were introduced to an exciting barrage of new updates at Minecraft Live; with 1.17 almost a year away I believe there are many more mobs that should be introduced, particularly ones that are snowy themed.

Bison could spawn on open grasslands and areas near the upgraded mountains; they would have 50 (x 25) hearts and could take a serious chunk out of your health if you come to close. Reindeer could spawn and co exist with mountain goats up on the upgraded mountains, they would really add something special to the game. Below are some ideas for what these could mobs could look like.
