It is a fish that spawns and hatches upstream of rivers and transforms into the sea and lakes.
This fish drops fish meat and caviar when killed.
It is also possible to capture it in a bucket.
Caviar can be eaten and hatched in water.
Sturgeon will be the only breedable fish in Minecraft ...
