    Very good idea, but keep in mind:

    A villager needs a station to work in, and with a station comes a working building for every biome. 

    Trades need to depend of difficulty of getting a certain item ( in earning)

    Trades need to depend on how op something could be ( in buying)

    Honestly, the botanist could first give 1 emerald for 10 bones, which would not be hard once you kill many skeletons/ fish.
