Mojang has done a great job with its most recent updates overhauling old systems and breathing new life into the game. I think this could still go further with a mob overhaul. The aim of such an overhaul would be to elevate older mobs to the same level as the newer ones while also adding the kinds of mobs needed to fill out the world for a more immersive game play experience.
I'm sure you would love to know what such an overhaul would intel. First It would bring most of the older mobs up to the same standard as the new ones, with better models, textures, and animations. Minor educational opportunity in the form of proper feed and care of animals, improved breeding and more realistic child growth, more accurate behaviors and actions. Second this would be the best opportunity to add mobs I am sure most of the player base thinks is missing from the game, like birds, deer, or even the previously promised frogs, vultures, meercats and such.
Minecraft is already headed in this direction and though I would love such an overhaul to be on the level of the mod Animania, all I am asking is for all of the older mobs the be elevated to the same level of the newer mobs such as the warden, panda, and goat, all of which have better models, textures and animation, and even some variations.
It is my belief that Minecraft has plenty of farm animals and hostile mobs but not many ambient or wild mods
If this idea does suit you please view the Animania mod from 1.12 for further reference.
