If Mojang's concept for the lush cave is final, then large flooded caves would feel slightly underwhelming. Underwater, there would be nothing to find and fight, just drip-leaf and Axolotls as far as the eye can see underwater. This mob would fix that. Imagine a large fish-like creature with the pale skin of an Axolotl, the plated head and jaw of a Placoderm (prehistoric extinct fish), and four fins? You get what I'm temporarily calling the albino brute.
This mob would only spawn in lush caves, where the glow-berry vines light up the water. If a player attempts to cross a body of water, they would eventually get noticed by an albino brute, lurking down on the lake floor. It would charge up and attack the player by ramming them with its head (which is armored in plates of bone), dealing them decent amounts of damage (3-4 points) and heavy knock back. These ram attacks break the player's boat, forcing them into a fight in which the brute speeds at them to ram them again, but can be dodged if the player sprint-swims fast enough. It has around the same health as an enderman, maybe a little more. However, the Brute can be dodged, so a player can swerve his/her boat around and outmaneuver the beast, using the light from the glow-berry vines to see when one is coming.
In short, this mob would make the massive lush cave lakes more than just a skating rink for boats. It would give rise to boat chases and aquatic fights truly worthy of the complex ecosystem Mojang is trying to build.
