The idea: Piglin brutes drink strength 1, standard duration potions before combatting, similar to how witches drink speed potions. They drop said potion if killed while drinking it.
The upsides:
1. Makes Piglin brutes more interesting: every other hostile mob, without exception I dare say, has a significant distinguishing feature separating it from its predecessors. Piglin brutes as they are currently are pretty much just beefier vindicators. They're just not unique.
2. Adds to the lore that the Piglins are both smart and Nether-inhabiting creatures; like the fire resistance potions Piglins barter away, strength potions can be made from entirely nether ingredients (well, except for the water bottles. how they get those in anyone's guess).
3. Gives players incentive to kill Piglin brutes instead of avoiding them all together. Helps introduce potions to players unaware of them and provides alternative sources of potions.
The downsides:
1. Might pose too much of a threat since brutes are strong and can disable shields already. Perhaps dependent on regional difficulty similar to the Illusioner's use of the blindness spell.
2. Piglin brute lore seems to be "they're just so naturally strong they don't need armor". Allowing them to drink potions might contradict the sentiment that they don't need combat supplements.
