Currently they're seen as kind of useless outside of early game (get melon seeds/vines when not near a jungle, etc) skyblock or datapacks.
What if they had more utility by letting them never run out of stock? This would be useful for the late game since players can build trading halls and even raid farms to get crazy amounts of emeralds. Like bricks and quartz blocks from Masons, certain blocks would become easier to get in good quantities - Coral, Sand, Red Sand (and by extention Sandstones, Glass and even concrete after a Piglin bartering set up) and Packed/Blue Ice.
I would keep the prices the same - to encourage a big investment in villager infrastructure or a good raid farm.
This would overall reduce grinding in the late game, incentive use of other game mechanics, give a use to an overlooked mob and discourage sand/concrete duping.
