Leopard's

leopards can be found in jungle biomes and snow biomes for snow leopards.

they won't attack unless one got hit [they will spawn in packs of 3] and pass aggro to other leopard 24 block near them.

There attack is biting you and can run twice as fast as you sprinting

They will drop leopard fur when they die which you can use to make full leopard fur armor witch are like leather

They can be breed using 2 cooked fish [any kind]

They won't be scared of you but breeding them will make the 2 that had a baby leopard and the baby leopard trust you and follow you and protect you they can teleport if you go to far and they will not despawn if feed of the baby

I chose leopards cause they are almost extinct to raise awareness for them
