This new structure generates very rarely in extreme hills biomes and features a smaller cousin to Ender dragons.
I envision the ruins of an old watchtower that has been taken over by the dragon. Maybe covered in moss, with (what else!) a treasure room in the basement.
Maybe there's even different types of Illigers living in the lower level while the dragon is above. Emeralds can be found in the Illiger chests.
As for the dragon itself, it's smaller with fewer hit points than the Ender Dragon, but its still going to need a few people outfitted in good gear to take on the eyrie.
To tie into some of the other ideas for extreme hills biomes, maybe a burned out village is on a lower plateau, or even an active village with a few survivors trying to eke out a living in the shadow of a dragon.
The Dragon drops a usable piece of an ender portal, to tie in with the awesome idea of a buildable end portal, and since the Eyrie is so rare and so many pieces are required it will take a long while to acquire all the pieces, thus keeping Ender Portals really rare. There's also a tiny chance it could drop a smaller head for the players museum.
Now, this may be too over the top, but what if they drop eggs that you could incubate (through an undoubtedly complex and difficult process) and it hatches into a tame version of a dragon that you can ride to quickly get from point a to point b.
Think of it: Minecraft Dragons! Lol
