Think about the possibilities in the jungle, I know frogs are coming in swamps but imagine the complexity of fish spawning from update aquatic applied to dart frogs or tree frogs in the jungles, which can drop poison when right clicked and sneaking. How about rattlesnakes in the badlands or deserts where they will only strike if you get within 2 blocks of them, it applies the poison effect and they give you an audible warning that they are present, and then their contemporary the hognose snake that looks very similar pattern wise to the rattle snake but just looks cute and you can tame, adding to the diversity of pets in minecraft, they could require sand or dirt to live in with a light source nearby. How about octopus or sting rays in oceans and birds flying overhead. Maybe when a season change update comes robins will start to spawn during autumn and winter and then disappear again in spring to be replaced by a different animal. A lot of minecraft just feels empty to me and mobs and the sounds they make will go a long way to making it feel real.
