I find running through the dungeons to be abit of a chore instead of having fun. Being a massive fan of all types of "randomly generated dungeon based repeatable games" such as... Binding of Issac, Enter the gungeon, and other such dungeon crawler indie games. I find that all of these games actually commit to a diverse level generation making running through them each time truly unique. I feel Asif running through Minecraft dungeons there is not enough variety in the level generation and always feels "too samey". I'd like to see more things to do whilst travelling through the level and would love if there were truly risk reward scenarios.
For example, in the binding of Issac you can encounter the devil room allowing you to trade health for powerful items to help you through your run.
If that was to be translated into this game id suggest putting actually difficult challenge rooms thruout levels for an actually decent reward instead of hoping that I don't run into dead ends that have don't nothing but made me feel like I've utterly wasted my time.
In the vein of enter the gungeon, during runs you can encounter shrines that can spice things up during a run, for example. One shrine may allow you to give it items in the hope of receiving a better one, or another which could offer a full heal in exchange for money.
In summary Minecraft dungeons in my opinion is in need of more things to do during a run to insentivise actuall exploration through the level, remove dead ends.
