Witches use cauldron like a work station

Witches should use cauldrons like work stations at midnight. They could brew different potions they can use for attack and defense. Basically the cauldron is just a way to rotate the potion set or combination they have. The potion in the cauldron in their hut will dictate what potion set the witch spawns with.

    They should also sleep during the day and be able to trade with them if your villager popularity is low

    Destroying their cauldron may make them unable to get potions

    They could collect mushrooms from around the swamp as part of their routine. It may get them out of the Swamp Hut for a bit so you can go inside
