This is going off of a few ideas about Fossils and Summoning Tables as well as the Past Dimension that I talked about in other posts. To respect the posting guidelines, I will suggest different Extinct Mobs in separate posts. If you are unfamiliar with the ideas of Fossils and Summoning Tables, or The Past Dimension, please check out my posts by those same titles.
Brachiosaurus are gigantic, neutral mobs that spawn naturally in the Past, and can be summoned using Brachiosaurus Fossils in a Summoning Table. They are the largest mobs in Minecraft, and like to feed from tall trees. They have an incredible amount of HP and deal nasty damage. A Brachi has two attacks: a backwards smack from its tail and a powerful stomp from the front. Brachis can be bred using Leaves, although it takes a lot. Like Triceratops, they can be tamed by stealing and hatching an egg, although for the baby to imprint there must be no Brachis within a certain radius during hatching. Once tamed, an adult Brachi is a walking fortress that can be given seven saddles and several chests. If a villager walks on a Brachi's back, they will sit down in an unoccupied saddle, like a boat. The main rider cannot use tools, instead the Attack Button makes the Brachi do a tail-whip, the Jump Button makes the Brachi stomp, and the Place/Use Button makes the Brachi rapidly eat leaves and other plants, a good way to get rid of excess vegetation. Their tall necks can also be climbed up if players need to get someplace high.
