Soul Sand Scorpion

A mob similar to a sea-scorpion/euryptarid, it would burrow just underneath the surface of the soul Sand, the only indication of its presence being a few small mounds, not unlike a carpet. Once the player or another mob gets close enough to them they jump out from hiding and attack them. Size could vary from about the size of a dog, to nearly as big as a piglin beast, or even larger.
