Currently the Soul Sand Valley doesn't have any mobs that are unique to it. Two are already found in the Overworld, and the third could already be found in the Nether before the update.
To add more variety to this biome, my suggestion for a new mob is the Leaping Skull, a gigantic fanged skull that springs and chatters along the dark dunes of the Soul Sand Valley like a monstrous toad. When it gets in range of a player, it springs forward from long distance and delivers a terrible bite, knocking them back. Then it is only a matter of seconds before it launches itself at them again!
With the abundance of Soul Sand found in the Soul Sand Valley, this undead mob would be particularly dangerous. Its major weakness would be its long cooldown on its leap attack, which the player could easily dodge if they react fast enough. Potentially, the skull could even be tricked into flinging itself off of a cliff, or into lava. However, Soul Sand makes dodging the skulls a much more difficult task.
The skulls could come in two sizes, medium and large, with damage scaling accordingly. Medium skulls would be more common, and would have the possibility of spawning in groups.
Potentially, these mobs could also be found in Nether Fortresses.
