Currently when bartering, Piglins will inspect the gold ingot you throw them for a few seconds before giving you an item in return. I think it could be fun to have Piglins examine other items too. For example, if you throw them an iron ingot, they would examine it for a bit, realize it isn't gold, and either attack the player or refuse to barter again for a while.
This could even be done with other ores. Depending on how close it looks to gold, a Piglin will examine it for longer. So they might look at a diamond or quartz or whatever for 2 seconds, iron for 4, and gold for the full 6.
Since netherite ingots are part gold, a Piglin could accept it after the full 6 seconds, but they would offer things from a modified loot table since what they really want is gold. Rare items could be made even more rare because the Piglin is miffed about the gold being crafted in an irreversible way. Alternatively, bartering with netherite could use the original loot table from before 20w09a. This could be a dastardly way to fool inexperienced players into making a bad deal.
