I believe that, in the interest of spreading awareness for extinct/endangered/threatened species, which seems to be at least one of the goals of some Minecraft updates (pandas, bees, etc.), the Baiji should be added as a rare mob in the Rivier Biome.
The baiji is a river dolphin that used to be found in Chinese rivers, prior to intense pollution as a result of rapid industrialization. While there are unconfirmed reports of them in remote locations, the species is considered extinct.
The baiji would essentially be a skin-variant of the dolphin that would only spawn in River biomes, while dolphins would be limited to ocean biomes. Potentially, it could be added as a way to check river quality (i.e., it doesn't spawn if the dirt near the river doesn't have grass or trees on it, making the water "dirtier"). I'm not sure what benefit it could provide the player besides something neat to look at, or acting like a normal dolphin in the rivers.
