It sounds like a zombie and a cow together 

It lives in the Nether

It looks like a zombiepigman but instead of the pig it is a cow and it hold a iron sword

It drops rotten flesh, leather, iron nugget's and iron sword

    no, we have piglins and zombified piglins, and hoglins, pigs should be the only nether-overworld animal species DOWNVOTE

    When I read this I thought "zombie cowboy" and to be honest, I'm slightly disappointed that this isn't that.
