Left-clicking a totem of undying on an iron golem should give the iron golem the totem of undying. The iron golem will appear holding the totem. When the iron golem dies, it is saved by the totem. Left-click the iron golem with an empty hand to take the totem back.
Also, Evokers should be saved from death by a totem of undying, however, if they do die after that, they still drop the totem.
