While these guys are normally microscopic, it would be pretty cool to see them in Minecraft as much bigger mobs. Tardigrades, also known as Water Bears, are little creatures that are known to be one of the most durable creatures on the planet. They can be found all over the world in essentially every environment. They also lived through the mass extinctions on earth (like the extinction of the dinosaurs). They eat moss, leaf litter, and some other small creatures. They are most common in moist places, but that doesn't stop them from living all around the world.
Minecraft, they would probably spawn in covered forests, giant spruce taigas, swamps, and caves. They would be passive mobs. They would have a lot of health since they are incredibly durable creatures, and they would be able to regenerate. They can survive in and out of water like a Guardian. They would take no fall damage. They would be able to be tamed and bred with leaves, and they could be mountable. They would not move super fast (maybe as fast as a saddled pig), but they would be able to be ridden in the water. They would be able to swim as fast, maybe faster, than they can walk on land. When killed, they drop 1-3 Tardigrade Flesh, which can be used as food, or as a potion ingredient for a Potion of Resistance.
I haven't quite decided how big they would be. Probably a little taller than a pig but also longer. Again, that is open to suggestions.
