A desert variant of the wandering trader, who should ride or herd orstriches around with him.
He should trade items useful for survival, like potions, or things that are hard to come by in the desert like melons and pumpkins.
If you want to be risqué he could sell an either zombie or skeleton monster spawned for 30-40 emeralds
