Now that villagers of each type will only sell some of all the potential items, (Farmers for example: some buy pumpkins, some buy melons. The probability seems be about equal.) it makes sense to have rare items.
So why not add rare trades? In particular, I suggest that either the weapon smith or the fletcher have a small (~5%) chance of selling an enchanted trident as their final trade. It would have to be a later trade so that players don't simply reset the villager each time a trident isn't shown. The player wouldn't know s/he got a trident selling villager until after trading with it.
This idea could be expanded upon, giving more villager variants a small chance of selling hard to get items.
