Endermites are pretty useless at the moment.
Giving them a new way to spawn (eating chorus fruit has been previously suggested by someone else) and making them spawn in groups of 3-10 endermites would make them a lot more of a threat and give them more reason to be remembered.
They could also have a chance to drop an Ender Shard of which can be combined with three others in a square to make an ender pearl.
