I believe that the Wither fight will inevitably be improved, as the current state (in both versions) is too flawed to remain the way it is, but I would like to suggest how this could be done.
Currently, gathering the wither skulls is a long and boring process. It really needs to be more fun. Maybe this could be accomplished by having the wither skeletons drop their skull when killed by a certain mob or when killed by some post-ender dragon item rather than be by simple random chance. This would be a lot more fun then just grinding skeletons for hours.
The spawn animation on the Java edition is better in my opinion, so I think that should be used. The spawning explosion should apply the wither effect to everything in range, as should all other large wither-centered explosions in the fight.
The wither should use the bedrock health system, with 300 hp on easy up to 600 on hard. The first phase should be like java edition, with a chaotic barrage of skulls to showcase that the wither is a force of nature. The second phase should transition with another explosion and wither skeleton spawns, and give projectile immunity and a melee attack to the wither.
The wither needs a more extravagant death. It should begin to spin and rise, glowing blue and shrinking, before exploding a final time.
The Wither should drop the nether star, as well as 500 experience as opposed to the measly 50 it currently gives.
