Normally in a Minecraft world, villagers only fear attacks from zombies (and soon pillagers & ravagers), and all it takes for a zombie to corrupt a villager is one kill and sometimes a difficulty change. However, I would like to propose an idea that does not replace this format, but adds onto it.
-Add a small (also difficulty based chance) that when a Zombie strikes a villager, it can infect it. Zombie Villagers who do this have an increased chance.
-Once a Villager is infected, it will slowly show the effects of turning into a Zombie (texture change, slight noise differences, etc).
-The infection might take a couple (Minecraft) days to go through, and once finished the Villager will of course transform into a Zombie Villager.
-If a player notices this transition, they can halt it early with the use of a Golden Apple on a Villager. (No potion of regeneration because it makes sense that they aren't fully converted).
-Iron Golems do not recognize the villager as a threat until it is fully transformed.
-A small time before they are fully transformed, other villagers might be weary of the infected, and run away as if it were a Zombie.
I believe this small detail would make sense for the upcoming 1.14 update, and would add just that bit more of interest to Villager life.
