So realistic sharks are not being added and let's be honest, with the addition of the drowned, the water has already become more deadly in recent years.
You know what hasn't become any more dangerous? Lava.
What: magma sharks and magma megladon
Why: to increase risk to lava pools both in the nether and overworld. The introduction of quartz and emeralds made exploration of lava risk environments more profitable, it makes sense to increase the risk too.
How: magma sharks spawn in bodies of lava over a certain size.
Their size increases in relation to the size of the lava pool (up to a limit). This can cause the largest magma sharks (magmaladons?) to spawn in the nether where the biggest magma pools are. Magma shark size increases its health and the number of blocks it destroys with its bite.
Magma sharks "attack" by breaking blocks placed adjacent to lava source blocks, this can cause bridges to be destroyed by their attacks and players to fall in where they are at the magma shark's mercy.
