    I like this idea, and it's very thought out, though I have a few changes in mind.

    Healing Mode

    For healing mode, I think it should spawn a special structure around it, containing purpur blocks, obsidian, and maybe some special block. Basically, you have to get through that structure and damage the Shulker Boss with a pickaxe (since its shell is really hard and a simple sword couldn't break it.

    Loot

    I think it should drop: end city loot, purpur  blocks, chorus fruit, levitation potions (or a special item to brew them), Shulker shells,  as well an the shulker armor.

    Shulker Armor

    shulker armor should have the protection of diamond armor (or more (or less)), four (or more (or less)) times the durability of diamond armor (explained later), when hit where wearing armor, attacks do a lot less damage and less knockback, and they can't be enchanted with any kind of protection, unbreaking, or mending.

    The helmet should allow other players or mobs to walk on your head.

    The chestplate should allow other players to not be able to bump into you, but just stop on you, allowing you to push other players or mobs more easily (or into a corner for them to suffocate.

    The leggings should have a special enchantment that can only be applied to them (name yet to come up and able to vary) and should allow you when you jump, to have levitation, jump boost, or slow falling (different levels varying level or length).

    And finally, last but not least, the boots should allow you to have the ability to walk on water or lava (with lava slowly chipping away at the durability) and should reduce fall damage, or have access to a higher level of feather falling.

    Those are just my ideas of how it could be improved. I don't think that this boss (or its armor) would be too OP, but as mentioned in the original post, maybe it should be a hard mode or hardcore mode exclusive.
