For some reason in Bedrock, you can start swimming in the shallowest layer of water (i.e. when it's barely one pixel on the ground).
In practice, this means you'll be sprinting and randomly faceplant just because you touched a tiny amount of water. I have a video of this: https://streamable.com/isbqc
In Java, you can only start swimming if you are underwater from feet to eyes. This is much better and causes way fewer accidents.
