In the overworld you have the snow golem and the iron golem.
I think they shouldn't be able to exist outside of the overworld, and that there should be specific golems for each dimension that shouldn't be able to exist in any of the others.
For example, in the nether there could be red nether brick golems, and nether wart block golems, because these blocks don't actually spawn naturally in the nether, and are kind of useless outside of building, despite not being particularly good looking blocks, in my opinion.
Also the golems would have to have some interesting quirk, like how iron golems flip up mobs, and snow golems shoot snowballs at them.
I would propose that the brick golems could swim quickly in lava to kill monsters, and could have a very small regeneration effect in lava, maybe half a heart every 10 seconds. Wart golems could throw nether wart at it's enemies, and could have maybe a 5 percent chance to inflict a random potion effect, good or bad, for 10 seconds.
In the end, I propose endstone brick golems, which can quickly teleport to the enemy to attack them, and have a 10 percent chance to prevent endermen teleportation for 10 seconds. Also, purpur golems which flip up enemies like iron golems but give levitation to them, and also release the shulker bullets, which can track the attacker, whenever it is attacked.
Also, please note that the structures that need to be built to spawn the golems should be different for each golem, like how the snow and iron golem have different structures.
These might seem slightly OP, but remember they are restricted to their own dimensions, and the mobs that are in there. Also, I chose deliberately slightly hard to get blocks so you'd have to put a bit more effort into spawning them.
