I like this idea a lot because with all of the village structures, church, butcher's shop etc. the baby villagers don't have a place to go. Well done! ;D

Nice idea.  Maybe the green clothed villager could be put to use here...

But it's a Nitwit, Bilbo! XD But yes, I can see that being a good use for it. Perhaps you can trade some apples for emeralds with it, and buy books and quills.

I think teacher villagers should sell written books which are textbooks for science, history, and math.

The math would be straightforward as regular math.

The history should contain dates (day 1, day 2, day 3, etc) for when important things happened.  E.g. Day 0 - world was created.  Day 1 - <playername> built a house.  (This would be detected by them sleeping in a bed).  Day 3 - <playername>’s mine reached bedrock. (This would be detected by the y coordinate of the player being 1)

The science book should include crafting recipes.

Bilbo Baggins , nice idea about books's contents.
Books do not make the sense in Minecraft if they don't help the players.

Villagers should go there to learn trades as well, like if a villager "wants" to be a blacksmith, he takes a blacksmiths lesson.

What if the new block for a teacher is something like a desk?

The problem with that is that Minecraft is too medieval, Minecraft needs to experience an industrial age because school was created to teach people how to mainly maintain a budget, work in an industrial system(the school system today is modeled of that of a factory system) and write. Minecraft doesn't need that, I mean parents commonly taught their children their profession and they followed an economic system of both trade and tradition. If villagers somehow happen to learn how to use machinery and build it, a school might be an option. A daycare, however, would do.

I like the idea of adding tips for new players and it also gives a new niche for baby villagers. I think maybe you could give a new job, the Scholar were you could trade for tips or answer questions.
