The sniffer egg can be found in ruins at the bottom of a warm ocean. They are made of sand blocks, and therefore were in the desert before they were flooded by the ocean. However, the coloring of the sniffer hatching from the egg found there is not at all suitable for the desert. Obviously, the sniffer lived in warm biomes, since its coloring includes a rich green color, and the egg cracks faster when it standing on a moss block. And from the fact that eggs are found in ruins made of sand, it follows that desert sniffers could have existed. Here are several coloring options.
It can be made a separate mob, or it can be made a subspecies of a regular sniffer, that is, either with some probability its egg can be found in ruins instead of a regular one, or a desert sniffer can hatch from a sniffer egg. It will sniff out, for example, fragments of jugs in sand, gravel and sandstone, and its egg will hatch faster on sand. A sniffer like this could be used for a pitcher farm or just as a pet. I think desert-colored sniffers would look pretty cool against the backdrop of the sun setting behind the dunes…
