Minecraft uses the Unifont font, which provides the standard Chinese character glyphs for mainland China, while Japanese kanji are displayed using the Unifont JP font. This means that in Minecraft, it does not fully comply with Taiwan's "Standard Form of National Characters" (國字標準字體/CNS11643) but instead uses the Chinese GB18030 standard.
24w06a Minecraft introduced a option called "Japanese Glyph Variants"(under Language->Font Settings) to favor Japanese Glyph Variants font. I think there should be a option for Taiwanese Glyph Variants as well.
