One issue I have with Minecraft is the lack of ambiance regions of the game have. One solution to this could be birds and bird nests. They would work similar to bees in the since that the birds will remain close to their nests and fly around during certain conditions depending on the breed, you can also collect the nests with birds inside to carry them or put eggs in the nest to make the birds broody, in which the birds will stay in the nest to nurture the eggs until the egg hatches into a random breed that was in the nest. To find birds and nests you will have to go out in the wild and search for them, different birds for different regions, like parrots and toucans for jungles, owls for old growth spruce forests, snowy owls for tundras, northern cardinals for spruce forests, seagulls for beaches, vultures for deserts, pigeons for stony peaks, and phoenixes for crimson forests. Some birds will have special behavior that can be disabled by feeding them seeds, some examples of this are that vultures pick up items and bring them to their nest, seagulls attack fish in nearby waters, pigeons will steal food off the ground and will follow the player who dropped it for a certain amount of time depending on the food, and phoenixes dive bomb at nearby mobs to ignite them.
