Some players (and by that, I mean noobs and beginners) do not think Minecraft easy enough. Even on Easy mode, you can still get overrun by monsters.
Other players (experinced ones) think Minecraft too easy, even on Normal or Hard mode.
Some players just want a challenge or a leisurely game.
For those players, there should be an adjustable amount of health. There could be a slider menu in General called "Health Level" that cannot be changed after world generation to avoid people cheating just as they are about to die.
It could be that it shows hearts, 10 full and 10 empty, that can be adjusted to reflect the amount of hearts that you would have when you create the world, the amount being how many of the hearts are full on the slider.
It should also be that you can only earn achievements on Heart Level Normal, to avoid any acheivements being earned easier or harder than they were intended to be. There, however could be acheivements added for different heart levels.
