The new changes in 1.20.50 Beta/Preview turns on Keep Inventory for peaceful and easy difficulties without turning off achievements but you can't change it on or off.
There should not be any repercussions for turning on Keep Inventory on peaceful mode only. Every other difficulty with Keep Inventory on should turn off achievements.
