Adding more than just minecart speed and movement would be interesting, such as a smooth FOV change for speeding up or slowing down, or your camera not only moving with the cart left and right, but also up and down. This will make it seem a lot more interesting when in a cart while doing a jump when your camera pans down with the minecart falling.
