I know writing this probably wont be implemented including that minecraft 1.21 has already been released however I still want to get my words out half as suggestions and half as venting.
To start I dislike how the things in Minecraft 1.20 and Mincecraft 1.21 have been implemented as the updates feel somewhat lacking and disconnected from Minecraft as a base, especially seeing the things that mojang studios can do with the 2023 potato update (for april fools) and i know this is due to constraints around being able to add things based on contract or what not.
things I personally would like to see changed for Minecraft is more content rich (if slower) updates that feel more meshed into the game as a whole.
examples for 1.21 would be better implementation of the mace as a different melee weapon on par with the sword rather then a super powerful and somewhat broken weapon that with the right setup can single hit every entity in Minecraft including bosses, my idea would be a version of the sword that can knock back multiple enemies at the cost of a damage reduction.
for the trial chamber i feel it would have made more sense to improve how the Minecraft dungeons spawned in the world potentially making tiers of dungeons with the current ones we see being the lowest and the highest being long, difficult and full of traps and mobs closer to a dungeons and dragons dungeon adventure.
I hope that some of these changes can be seen in future updates of Minecraft
