Minecraft already has a variety of undead mobs and vampires are too iconic to not include. Here are how they can be implemented.
1. Burn in sunlight
2. Are repelled by beetroot similar to how hoglins avoid warped fungus
3. Do slightly higher levels of damage as zombies but attack at a faster speed
4. Walk faster than most other hostile mobs. Can also leap great distances
5. Attack villagers and turn them into vampire villagers
6. 15 hearts of health and cannot wear armor
7. Drop rotten flesh and new items
8. Spawn as commonly as witches in most overworld biomes but spawn more frequently in dark forest biomes. Will spawn in groups of one. Will also spawn in a new structure known as crypts
9. Will occasionally play note blocks
10. When bats are struck by lightning they turn into vampires
11. Beetroot will now restore two points of hunger instead of one and beetroot soup will only require three beetroot to make
12. A new item, beetroot garland, will repel vampires up to a distance and can be be hung either from a ceiling or on a wall. They can be crafted with one string and two beetroot. Beetroot garlands will also be found in villages
