Ever since Jeb became the lead developer, the only fantasy creatures that have been added (except the phantom) are those that exist only in Minecraft. (Mobs like the allay come close, but I'm not counting them.) I've seen plenty of suggestions for imaginary mobs that exist outside of Minecraft, but those ideas seem to always be pushed aside in favor of mobs with similar abilities but are entirely original, yet supposedly Minecraft's development is rooted in the suggestions and feedback the community gives.
So I suggest the common fantasy mob vote! In this, we take three mob ideas that are imaginary yet exist outside of Minecraft. To start, I will invite the red dragon (one of Notch's greatest legacies), tuff golem (from the 2022 mob vote) and copper golem (from the 2021 mob vote), though it is up to Mojang on whether they come. Additionally, here is a list of other fantasy creatures I can think of, and feel free to add more to the list and suggestions for what they could do in the comments! (If you see one you don't know about, look it up! You can probably find out what it is on the internet. Now, onto the list:)
