I adore the newer variants of both the wolves and cats. However, i would like to see a few more variants for both of them!
For the cats i think it would be amazing to have a Tortoiseshell [They're like Calico's except they're black instead of white, pretty much like the painted wolves!] I would love it so much if you added that as a cat variant because i recently lost my favorite tortoiseshell cat Pixel in real life due to natural causes, and It would be amazing to go on adventures with her again..
Another cat breed idea could be the Sphynx! Maybe this one can only be found in desert temples? the reason i feel this cat breed would be fitting with the desert is because of their breed being similar to the ancient Egypt beliefs [Example: The Great Sphinx of Giza!]

As for the wolves i think it would be a perfect fit for there to be a Arabian Wolf roaming through the hot sands of the deserts! After all, This wolf breed will compliment the desert with it's colors and make the deserts feel more alive! And if coyotes were eventually added into Minecraft this would be a good predator towards them!
And one more wolf variant idea can be the Mexican Wolf, They're considered a critically endangered species. Adding this species could help bring awareness to them being endangered just like the Axolotls and Bees! This wolf species lives in mountain woodlands, so this species would be good for mountains!
