There should be some way to "lock" an item's armor trims. Specifically on the data side of things (there's not a lot of survival viable reasons to need to lock an armor trim)... There should be some kind of component/nbt tag to lock armor trims, so that they can't be replaced or changed with a Smithing Table.
Why would this be useful? Well, for making custom armor, that's why. Because armor trims are data-driven, you can add command-only trim patterns for the sole purpose of making custom armor textures. The problem is you can just switch the trim using the smithing table, which ruins the whole idea of it being a unique armor piece in the first place.
Or better yet... Just make armor textures data-driven and let us make custom armor in itself.
