Make offsprings' trades partially or wholly dependent on the villager parents' trades. This would create a new mechanic similar to horse breeding. This makes sense as a game mechanic, lore wise, and logically. Players could still make their trading halls with the best trades at the best prices but would require more exploring and interaction with the world.
Example: Player breeds Famer A from Biome X with Famer B from Biome Z. Trades from each level tier are randomly chosen from each parent with different weights depending on the rarity of the trades with a random chance of a new trade thrown in. For the trades to not completely default to current biome the breeding pair would need to first have all trade tiers unlocked.
Breeding 2 different professions would create a blank villager same as in game now.
