They would oxidize and be able to be waxed and reverted (like all things copper) (the buttons would be reverted by shift-clicking). The redstone output would correspond to the light level of a cooper bulb w/ the same oxidization level. The amount of time it remains pressed would be halfway between wood and stone as well! 1.21 IS supposed to expand a little on redstone (as stated during Minecraft Live) after all! I have a copper button/pressure plate redstone output chart below:
