This may be a controversial topic and has been in the game since the introduction of Endermen but the Endermen griefing feature needs to be removed. Creepers, for example, are mostly preventable and require a player to cause damage, and if damaged is caused, is generally quick to fix. Endermen no matter what absolutely demolish your world with nothing you can do about it. Yes, you can light up the area but that's not feasible at all. Most people's worlds have many (or at least multiple) locations and caves are a factor too.
This feature adds nothing to the game but inconvenience/annoyance for players, not even lore in my opinion. Can't use an add-on for it because that 'invalidates' a world simply by achievements not being obtainable. Cannot use the mobgriefing gamerule because that disables all the other desired/base features.
My solution is to leave Endermen griefing on by default, but at least give the player an option to turn off with a stand-alone gamerule. Ability to set in survival, similar to playerssleepingpercentage, would be even better.
