Imagine the following: A new update is released, but you don't like some of the new features in that update. What you could do now is just keep playing the old version of the game. However, this brings with it the problem that you won't be able to play the new features in the future updates. Now here's the solution: when you create a new world, let the player decide these things for themselves. Let them decide what mobs can spawn, what structures, what items, I don't know... Gravity, let them go crazy if they want to. In other words, treat each new feature like a mod that can be installed or uninstalled. Minecraft 1.0 is the base and features from every update after that can be turned off and on.
