Through breeding, tamed wolves should be able to develop mutations. Mutations can be obvious like shorter snouts, brown fur etc. They can also be behavioral, like maybe the base wolf breed has lower behavior points meaning they often attack animals when hungry, these non-physical attributes can be checked by petting sort of like how you can see horse heart count by riding them.
Players can then choose to enhance those attributes by breeding them with dogs who have similar features or mix features from different breeds. But be warned because overbreeding of traits can cause defects like lower health, lower attack, slower speed, and even lower vision causing them to be unable to find the player when straying too far.
This can be made as an educational experience not only on how dog breeds came to be, but it can also inform people on the harms of overbreeding of purebred dogs which has been the cause of many health problems in many dog breeds.
This idea stems from the horse breeding feature in vanilla minecraft, where you can mix and match colors and patterns through breeding which I think is really cool and would love to see it be applied to dogs.
